27 strength and 40 dex is your best bet for a quality build, any weapon that scales well in both will work. And since you said you're on DS3 that means you can use refined gems to make any weapon scale well with both. 27/40 is what you want for all the souls games though since the soft caps are both at 40 but strength gets a 50% boost from 2 ...Going for 60 dex will still give you plenty of options though.
